Almond Crusted Chicken Tenders

  • 1 lb chicken tenders
  • 1 cup almond flour
  • 1/2 cup finely chopped almonds
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the eggs until smooth.
  3. In another bowl, combine almond flour, chopped almonds, garlic powder, paprika, salt, and pepper.
  4. Dip each chicken tender into the egg mixture, then coat thoroughly with the almond mixture, pressing gently to adhere.
  5. Place the coated tenders on the prepared baking sheet.
  6. Lightly drizzle or spray olive oil over the chicken tenders for extra crispiness.
  7. Bake for 15-20 minutes or until the chicken is cooked through and the crust is golden brown.
  8. Serve hot with your favorite dipping sauce or side.

Notes

For extra crunch, toast the chopped almonds lightly before mixing. Serve with a honey mustard or spicy aioli for added flavor.
