African Peanut Soup

A hearty and flavorful African Peanut Soup combining rich peanut butter with fresh vegetables and spices for a comforting, protein-packed meal.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, chopped
  • 1 sweet potato, peeled and diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup natural peanut butter
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup cooked chickpeas or black-eyed peas
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add garlic, grated ginger, and red bell pepper. Cook for another 3 minutes until fragrant.
  3. Add the diced sweet potato, diced tomatoes with juice, and vegetable broth. Stir in cumin, cayenne pepper, salt, and black pepper.
  4. Bring the soup to a boil, then reduce heat to a simmer. Cover and cook for 20 minutes or until sweet potatoes are tender.
  5. Stir in peanut butter until fully incorporated and smooth.
  6. Add cooked chickpeas or black-eyed peas and simmer for another 5 minutes to heat through.
  7. Remove from heat, stir in lime juice, and adjust seasoning if necessary.
  8. Ladle soup into bowls and garnish with fresh cilantro before serving.

Notes

For extra richness, swirl in a splash of coconut milk before serving or serve with crusty bread to soak up the delicious broth.
