Whip up this naturally vibrant and incredibly easy raspberry mousse in minutes with just 6 simple ingredients. Perfect for a quick, elegant dessert that’s bursting with fresh berry flavor and a delightfully airy texture.

  • 1 ½ cups fresh or frozen raspberries
  • 1 ½ cups heavy whipping cream, very cold
  • ½ cup powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 4 ounces cream cheese, softened

Instructions

  1. In a food processor or blender, combine the raspberries and lemon juice. Process until smooth. If using frozen raspberries, you might need a splash of water (1-2 tablespoons) to help blend, but ensure the puree isn’t too watery.
  2. Pass the raspberry puree through a fine-mesh sieve into a medium bowl to remove the seeds. Discard the seeds.
  3. In a large mixing bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy.
  4. In a separate, very cold bowl (preferably metal, chilled beforehand), combine the cold heavy whipping cream and powdered sugar. Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat.
  5. Gently fold about one-third of the whipped cream into the cream cheese mixture until just combined to lighten it.
  6. Add the sieved raspberry puree to the lightened cream cheese mixture and fold until evenly combined.
  7. Gently fold in the remaining whipped cream until no streaks remain, being careful not to deflate the mixture.
  8. Spoon the mousse into individual serving glasses or a large serving bowl.
  9. Cover and chill in the refrigerator for at least 2-4 hours, or until firm enough to serve.
  10. Garnish with fresh raspberries or a light dusting of powdered sugar before serving, if desired.

Notes

For an extra burst of flavor and a beautiful presentation, garnish with fresh raspberries and a sprig of mint right before serving. You can also layer the mousse with graham cracker crumbs for a mini trifle effect.
